Rare sake from a hidden brewery 

Yoro is long-established sake brewery (founded in 1921). Its 'Kaze no Sato' sake is handmade using the abundant underground water from the Hiji River, and Shizuku Hime and Matsuyama Mitsui local varieties of rice as main ingredients. A rare sake that rarely appears on the market. Its highest grade, the 'Junmai Ginjo Kaze no Sato' has a smooth and mellow taste, like the wind blowing through Hiji River on a winter morning. When you put it in your mouth, the rich ginjo aroma shines through. 

Here all sake brewing is done by hand. It's really a battle of physical strength. Every day, the process begins by digging up more than 300 kg of steamed rice with a shovel. As a consequence it can only be produced in small quantities. Because we adjust the ingredients by just observing and feeling them under our skin, we can create sake that brings out the natural flavour of rice. ``Junmai Nigori Kaze no Sato'' is finished in the middle of fermentation and is characterized by its rich flavour. A cup that represents well the richness unique to pure rice sake and with a refreshing aftertaste. 

 

It suffered severe damage from the heavy rains in western Japan in 2018, with water flooding up to 3 meters above the floor, forcing production to be temporarily halted. Thanks to the support of the Sake Brewers Association and many other people, we are now able to continue producing sake in the same location and using the same method. At the back of the storehouse, there is a clock that still shows the time of the flood.
