NIPPONIA HOTEL Ozu castle-town dinners are served at their 'Le Un' restaurant .
Seto Inland Sea seafood, vegetables and fruits coming from neighbouring mountains and the pure waters of the Hiji River feeding them, form the core of the menu that awaits visitors. Hints of local history are also incorporated when possible, thanks to some historic literature reflecting culinary habits of former feudal local lords. Such variety y treasures with French techniques and finish it as an innovative fusion dish that is neither Japanese nor Western.
